Des crêpes à l’escargot ou aux paillettes d’algues et puis des concerts ou des spectacles de magie, chaque jeudi soir… À la crêperie Diwali, à Kérinou, Jean-Sébastien Hay ne fait pas grand-chose comme les autres. Et c’est bien ainsi.

Huit années à la tête du même restaurant. Pour Jean-Sébastien Hay, baroudeur dans l’âme, c’est un petit exploit en soi. Mais le Guilérien d’origine vous dira qu’il a trouvé sa place à Kerinou, « à jongler entre la salle et la cuisine de Diwali », son restaurant-crêperie qu’il a lancé en 2005.

Entre les deux, Jean-Sébastien Hay est bien incapable de choisir. « J’aime bien cet entre-deux, raconte-t-il. Je recherche autant le plaisir en cuisine que le rapport social avec le client en salle. J’aimerais pas qu’un client ait aimé mes crêpes mais ait trouvé l’accueil très froid, ou l’inverse ».

Les gammes à Singapour

L’explication est à aller chercher dans son parcours. Jean-Sébastien Hay s’est d’abord formé à la gestion et au marketing hôtelier. Avant d’ajouter un CAP cuisine sur le tard. « C’est après que je suis parti acquérir des expériences un peu partout dans le monde. J’avais besoin de prendre confiance », raconte-t-il.

À Singapour, il sera servi. Le Guilérien s’y voit confier la tâche de monter la première crêperie de la ville. « J’avais carte blanche. L’idée était de faire quelque chose de haut de gamme, de raffiné ». Direction ensuite l’Australie où le cuisinier travaille dans un restaurant-crêperie aux côtés de Chinois, de Malaisiens, d’Indiens… « On faisait un mix assez étonnant de toutes nos influences ».

Terroir et exotisme

Jean-Sébastien Hay n’a pas tout perdu de ces deux expériences. Elles transparaissent largement sur la carte de Diwali. Que ce soit sur la carte brasserie ou sur celle des crêpes. « L’idée est de toujours associer une cuisine du terroir à une saveur exotique, explique le cuisinier. Et par exotique, je n’entends pas forcément un ingrédient qui vient de loin, mais plus quelque chose d’étonnant ».

À Diwali, on peut ainsi déguster la Ty ar Men, aux fruits de mer et avec une sauce aux paillettes d’algues, se laisser tenter par la Korrigan à base d’escargots et de lardons ou même encore s’aventurer vers le sucré-salé avec la Lys de France associant le magret de canard à une sauce à l’orange…

Les jeudis de Diwali

Voilà qui attise l’appétit. Mais à Diwali, il n’y a pas qu’à manger. L’ambiance aussi est travaillée. Les Jeudis de Diwali sont même devenus une institution. D’une semaine à l’autre, Jean-Sébastien Hay concocte une soirée thématique à ses clients d’un soir. « Ça va de la soirée découverte des jeux du monde aux spectacles de magie », détaille le cuisinier. En passant par des soirées contes et des minis concerts.

« Ce n’est pas facile, parce qu’on reste dans un restaurant. Les gens ne viennent pas forcément pour être dérangés. Mais certains artistes ont réussi à ce que toute la salle frappe en même temps des mains. Ça c’est top ». Ce jeudi soir, ce sera autour du guitariste Yann Quefféléant de relever le défi.
