JEAN SEBASTIEN HAY – LE CREPIER GLOBE-TROTTEUR

Il a parcouru l’Asie et l’Amérique centrale, découvert les épices à Singapour, et la cuisine chinoise en Australie. Désormais installé à Kérinou, il marie avec passion tradition et cuisine du monde

« j’aime cuisiner, mais je suis frustré quand je ne prends pas le temps de discuter avec les gens » : Jean Sébastien Hay est passionné de cuisine, mais encore plus de contact et d’échanges. Son parcours tout entier en est la preuve. Titulaire d’une maîtrise de gestion et marketing hôtelier, il « fait de saisons » durant ses études, en salle et en cuisine. Mais dans la famille Hay, le grand frère vit en Inde et le petit frère en Colombie. C’est l’appel au voyage, à la découverte d’autres cultures, d’autres cuisines et saveurs. Il part alors en Colombie, fait un tour au Guatemala.

Une crêperie à Singapour

Mais les bases de la cuisine manque. Un CAP et quelques saisons plus tard, c’est à nouveau l’aventure. « Je me suis vu confier l’ouverture d’un restaurant crêperie à Singapour. J’avais carte blanche. J’ai cuisiné avec des Malaisiens, des Indiens… Un vrai échange de connaissances. C’est de cette expérience, et de quelques autres rencontres, que j’ai élaboré la carte de Diwali ». D’autant qu’à Singapour, il fait la connaissance de quelques grands chefs, dont un second meilleur ouvrier de France.

Investir en Australie ou rentrer au pays

Il y aura encore l’Australie et l’aventure d’un an, dans un restaurant végétarien, avec une famille chinoise. « J’ai encore appris, j’avais le choix entre investir en Australie ou rentrer au pays ».

La nostalgie aidant, Jean-Sébastien est bientôt de retour à Guilers et c’est à Kérinou qu’il pose casseroles et billigs. « J’avais envie de construire mon propre projet. Nous avons commencé à deux. Et aujourd’hui, en ce début de sixième année d’existence de Diwali, nous sommes cinq » note-t-il fièrement en ajoutant : « tout au long de mon parcours, on m’a fait confiance. Alors j’ai envie de transmettre et de partager ma passion de la cuisine. Une cuisine, mélange de saveurs, entre tradition et exotisme ».

Des Chimistes en reconversion

Et pour bien transmettre, il accueille en satge ceux qui ont des projets :  « c’est souvent en vue d’une reconversion. J’ai reçu un couple de chimistes, une infirmière, des japonnais installés en Indonésie, un couple de retraité de la RATP, un chocolatier d’Israël… A chaque fois, ce sont des échanges et d’autres points de vue qui alimentent la réflexion ».
